Cotoletta alla Milanese Machine Line, is designed specifically for the efficient manufacture of breaded, fried cutlets in the style of Cotoletta alla Milanese: tender slices of meat coated in flour (pre-dust), immersed in batter, uniformly breaded and then fried to a golden, crunchy finish. The system ensures consistent quality, high throughput and full compatibility with HACCP and food-industry hygiene standards.

Typical Workflow (Flow Chart)
Slicing → Flouring → Battering → Crumbing (Breading) → Frying → Cooling → Packing
This end-to-end sequence ensures raw material to finished product in a streamlined production run.
1.Slicing/Portioning Machine – The meat (veal, chicken or pork) is trimmed and portioned into uniform cutlets. Ensures consistent thickness and size, ideal for uniform coating and frying.
2.Pre-Dusting / Flouring Machine – The cutlets move on a conveyor belt through a pre-dusting/flouring unit, where a fine layer of flour or dry mix is applied to enhance adhesion of the subsequent batter.
3.Battering Machine – The pre-dusted slices are immersed or passed through a batter application system (for example a waterfall or curtain type) to fully coat the surface in liquid batter.
4.Breading / Crumb Coating Machine – Immediately following the batter, the product passes through the breading stage: loose breadcrumbs or panko are applied uniformly (via vibration, overflow or spray) and excess crumb is removed by blowers.
5.Frying Machine / Continuous Fryer – The breaded cutlets then enter a continuous fryer (oil or optionally clarified butter style) that brings the product to the correct internal temperature, absorbs minimal oil, and delivers a crisp golden crust. For the true Cotoletta style, the traditional method uses butter frying; in an industrial line this may be adapted to oil or clarifier unit for throughput.
6.Cooling / Conveying / Packing – After frying the product is conveyed out for cooling, possible flash-freezing, inspection and packaging. The line may include automatic conveyors, sensors and packaging integration.
Applications cotoletta alla Milanese Machine Line
The “Cotoletta alla Milanese” is a classic Italian breaded veal cutlet, traditionally bone-in, breaded and fried in butter. ([sanpellegrino.com][4]) While the traditional method is artisanal, this production line replicates the breading and frying steps at scale. The pre-dust → batter → breading → frying sequence mirrors the home-kitchen process (flour → egg batter → breadcrumbs → fry) but in continuous industrial automation.
